Mrs. Lovett is an “eminently practical” woman who always comes up with a scheme that will keep them ahead of the law, but turning a profit; she decides after Sweeney kills his blackmailer (“oh, that’s all right, then,” she says; “for a minute, I thought you’d lost your marbles”) that it’s a “shame” to waste all that good meat, when there’s a desperate need for it in her pie shop (she isn’t fast enough to catch the neighborhood cats, unlike her competitors). She also convinces Todd to keep Tobey around by insisting she was going to hire a boy to help her with all that baking. And she is forever making plans about what she intends to do with the profits, but her blind spot seems to be her ability to put aside her emotions for what is most logical in the situation. She loves Tobey and cares about him, but the minute she knows he’s going to get the “law” down on them, she tricks him into going into the basement, and intends to have Todd slit his throat to keep them out of prison. Because it suits her own purpose (she cares about Todd and wants him to love her instead), she keeps the news from him that his wife is still alive, just insane (“No, I never lied at all,” she insists, “I told you she took poison, not that she died!”). She is still foolish enough even after betraying Todd to ask him, pleadingly, “Can we still get married?” and to want to believe that he has “forgiven and will forget.” Given her middle functions, Lovett is always speculating and dreaming about the future. She encourages Todd to be patient, and tells him it takes “time” for plants to unfold; she kept his silver razors around thinking he might one day return for them (“could have sold them, but I never did”), and uses them to bait him into staying with her. She carefully ensures that the police don’t come looking for them by insisting they choose their victims with “care,” always picking people who “won’t be missed.” She funnels his need and desire for revenge into making her pie shop successful, but also in the back of her mind has their future all planned out—in a little house by the sea, after they get married (“my rumpled bedding legitimized” and “we’ll have chums over every Friday!”). Lovett is opportunistic and in some ways, foolish. She takes in Todd and thinks she can cultivate him in the way she wants him to go, failing to realize the threat of keeping a serial killer under her roof. She quickly adapts to just about any situation and can use it to her advantage. Lovett shows her love for fine things through her indulgences, purchases, how she starts to dress better, and wants to “spruce up” the place with taxidermy animals to lend a bit of class.

Mrs. Lovett is an opportunistic of the highest order, but also one who is brutally honest at times (“The Worst Pies in London”). She is a dreamer and a schemer from the start, who gets it into her head that she can help Mr. Todd and then he will fall in love with her, and by and by she’ll marry him and take him away from all of this and live a pleasant life by the seashore (reaching for unrealistic expectations, given how damaged he is). She sees the potential in all those bodies he’s piling up, to turn them into profitable meat pies, and is unapologetic in doing so, and even makes jokes about what to serve to various people. She is at times naïve about Todd, but also can ruthlessly deal with problems (killing people, getting rid of them, concealing the truth about Todd’s wife, and then admitting that they have to kill Tobey because he has discovered the truth, but wanting him to have a “nice time” and eat as many pies as he can stomach first, as if to make it more pleasant).
